Make your own beer pancakes

HERE'S WHAT YOU'll NEED

  • 3 EGGS, BEATEN
  • 250G SIEVED PLAIN FLOUR
  • PINCH OF SALT
  • 20G SUGAR
  • 400ML MILK
  • 40G BUTTER, MELTED
  • 100ML BEER

If you pick the right beer you can add all kinds of wonderful flavours to your pancake batter. A nice premium-strength lager like Carlsberg Expørt or Special Brew adds a malty sweetness and a hoppy pale ale, such as Shipyard IPA or Brooklyn Defender IPA gives your batter a nice citric tang.

MIX YOUR BATTER

Right, so before you start you will want to crack open a nice bottle of your beer of choice and pour yourself a glass. Cheers! Once you’ve treated yourself to a nice little sip, you’re ready to move on to the next step: mixing your batter.

Sieve the flour into a big mixing bowl with a tiny bit of salt, sugar and melted butter, then crack in the eggs and add the milk. Using a whisk, beat the mixture while adding the beer gradually so it doesn’t foam over. Whisk until there are no big lumps.

Now get your frying pan on high heat. Add some more butter, then turn the heat down to medium and add a little bit of batter to the pan to check the temperature – kudos if you don’t mess up the first one. Fry your pancakes until the bubbles on the surface pop, then flip!
